One of the most reputable gastronomic products on the Costa Brava —even on a global scale— is the L'Escala anchovy. The town has a long and historical tradition in the anchovy industry, using age-old production methods —made with natural products— that has been kept up over the years. Visiting one of the anchovy factories in the town is a unique opportunity to get to know how L'Escala anchovies are produced today. It is also interesting to take the guided tour of the Museum of Anchovy and Salt.

Eels are another highly prized food product. They are caught in the Gola del Ter and in the Molí de Pals irrigation canal, in the heart of the Natural Park. Eel fishing in the Baix Ter was started by the Basque fishermen who settled in Torroella de Montgrí in the mid-1950s. The Ter eel is fished with a bussó, a specific trap for catching specimens smaller than 10 cm.
